Rocky Road: Chocolate, nuts & Marsh Mallows… could it get any better? … How about adding Mommi 3-in-1 and turning it into a tasting HEALTHY treat, packed with protein & vitamins!
Don’t you just LOVE these crazy national holidays? They are a great excuse for me to get to the kitchen and start creating! I get bored of the same old protein bars or “healthy” treats I can find. When I am trying to watch what I eat and make sure I get enough protein and vitamins I like to start being creative in my snacks and meals. So in honor of Rocky Road Day, I found a yummy treat that I thought I could improve and make it Mommi approved!
No-Bake Mommi Rocky Road Protein Balls
I found the original recipe from The Life of a Busy Fit Mom they looked so yummy I wanted to try to reinvent them with Mommi & a slight adjustment on the ingredients because I don’t eat peanut butter! First I switched the coconut flour for unsweetened coconut flakes, i have found in recipes that use coconut flour it is VERY dry and it like sucks all the moisture from my mouth, so I typically use the unsweetened coconut flakes. I exchanged the peanut butter for almond butter, the regular almond milk for chocolate almond milk (because i LOVE extra chocolate) added sliced almonds, and used Mommi 3-in-1 Chocolate! The results: SUPER YUMMY ROCKY ROAD GOODNESS! Here is the recipe:
1 cup Mommi 3-in-1 Prenatal Protein Powder (Chocolate)
1/2 cup Coconut Flakes (unsweetned) plus extra for rolling balls in
2 tbsp Almond Flour
2 tbsp Cocoa Powder
1/4 cup Almond Flour
1/2 cup Chocolate Almond Milk
1/4 cup Sliced Almonds
1/4 cup Mini Marsh Mallow Bites
Mix Dry ingredients together in a bowl, make sure to get all lumps out.
Chill in fridge for 30min
Form into round balls, then roll them around in extra coconut flour
Store in fridge, in airtight container. Makes apx 16- 1 inch balls
