Our Mommi Team likes to put on their chef hats and get creative. Mommi Protein is not a only good for you while you are pregnant- it can also be used in lots of fun and tasty ways. Today our very own Utah Mommi, Kristi Shields shares her Strawberry Shortcake Overnight Oats recipe with you.
I need to start off with the fact that I am definitely NOT a morning person. With that comes with not the BIGGEST appetite to eat breakfast in the morning, but this is SO BAD FOR YOU! Breakfast is the most important meal because it gets your metabolism going! Gives you energy for the day, and helps you curb your cravings throughout the day. So, with breakfast foods, I look for easy & convenient! But it also needs to be HEALTHY, filled with good, proteins, vitamins, carbs & fats. In comes one of my FAVORITE things to make: Overnight Oats.
You can make enough for the whole week in about 30min and BOOM you have a healthy breakfast every morning. I started skipping my overnight oats when I started drinking Mommi 3-in-1 every morning while pregnant & nursing, because the Protein plus prenatal seemed more important. But then I thought… WHY CAN’T I HAVE BOTH?!!
After some “pinteresting” I found a few recipes that included tossing in protein powder to your overnight oat recipes and I just knew this was going to be good! Below is a recipe I adapted from The Dashing Dish, I swapped the 1/4 cup protein powder for 2 scoops of Vanilla Mommi 3-in-1*, I also used fat free greek yogurt and Agave instead of Stevia, because well, I don’t like Stevia…but mine was REALLY sweet and I think I could leave out sweetener all together! (you could also substitute Honey, but I knew my baby boy would love it, so I stayed away from honey).
The result: SO MUCH BETTER THAN I ANTICIPATED.
This recipe makes enough for 2 servings, but if you do that you should eat both servings in the same day so you can get all your Prenatal vitamins & DHA or later drink a Mommi shake with just one scoop (half a serving). I eat one when i wake up, before my workout; then the other as my mid morning meal or after workout meal.

Ingredients
3/4 cup Almond Milk (or Milk of choice)
1/2 cup Fat Free Greek Yogurt (Fage)
1 1/2 cup Sliced Strawberries
1 cup Old Fashioned Oats
2 scoops Mommi 3-in-1* Vanilla Prenatal Protein Powder
1-2 Tbs Agave *
*Chef Note: I don’t think it actually needs this
Directions
Place 1 cup sliced strawberries in a medium bowl and smash them with a fork until they are mashed (juice will also form, which is what you want).
Add the rest of the sliced berries to the bowl along with the rest of the ingredients. Stir well to combine.
Divide between 2 small bowls, mugs, or mason jars. Cover and refrigerate overnight (or for at least an hour++ so the oats soften and absorb the liquid).
Enjoy cold, or microwave for 30-60 seconds to enjoy warm!
